Not a wild game recipe, but I suppose you could make these with wild game like boar... McCormicks Memphis BBQ rub. Comes in a packet from the spice aisle at the grocery store. Coat your ribs with it and wrap them in plastic wrap. Refridgerate overnite. Preheat your smoker to 180°, make sure your wood chips (I used apple) are good and wet (I left a little water in the wood chip pan). Smoke your ribs for 3 hours. Remove from the smoker, coat with a good honey bbq sauce and grill on medium heart until the sauce is caramelized to your liking. Wrap tightly in foil and let rest for 15 minutes before serving... Then check out the smoke ring... and ENJOY!
